Split Pea Soup with Ham

Makes 6 to 8 servings
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 stalk celery, diced
- 1 medium carrot, diced
- 2 cloves garlic, minced
- 1 pound split peas, picked over and washed
- 4 cups ham or chicken stock
- 3 cups water
- 1 bay leaf
- 1 cup cubed ham
- coarse salt and freshly ground black pepper to taste
HEAT olive oil in a large, heavy pot, add the onion, celery, carrot and garlic, and cook over medium heat until vegetables are softened, about 5 minutes. Add split peas, stock, water and bay leaf.
BRING to a boil, then reduce heat, cover and simmer, stirring occasionally, until peas are tender, about 1 hour. Season to taste with salt and black pepper. Add cubed ham.
