Baton Rouge, La (press release) – Emeril’s Chop House, a new restaurant by Chef Emeril Lagasse, will open in partnership with L’Auberge Casino & Hotel Baton Rouge in 2026.

Organizers share that Lagasse, a celebrity Chef and New Orleans legend, will serve an elevated menu in a modern, refined space, blending fine-dining elements with a comfortable, down-home atmosphere.

Emeril’s Chop House will offer Lagasse’s take on the classic American steakhouse and will feature seating for 175 guests, including a private dining room, bar and new lounge area with contemporary design elements.

“With Emeril’s Chop House, we are excited to create a restaurant that delivers the very best – exceptional steaks, the freshest seafood, signature dishes you won’t find anywhere else and handcrafted cocktails that complete the dining experience,” said Lagasse. “It’s about the best quality ingredients, bold flavors and that unmistakable Louisiana hospitality that makes every meal feel like an occasion.”

The new restaurant will replace the existing 18 Steak at L’Auberge, with construction expected to begin in early 2026. L’Auberge will continue to serve guests via the 18 Steak menu during construction.

“Emeril is synonymous with Louisiana cuisine, and bringing his signature flair to our Baton Rouge property creates another exciting attraction that levels up the fun for our guests,” said Jeremy Fontenot, vice president and general manager of L’Auberge Baton Rouge. “We’re thrilled to work with Emeril and his talented team to refresh our steakhouse, which elevates our dining options and furthers our standing as one of the premier entertainment destinations in the region.”

PENN Entertainment, the owner of L’Auberge, and The Emeril Group previously announced plans to bring Meril, one of New Orleans’ most beloved neighborhood restaurants, to PENN’s market-leading M Resort Spa Casino Las Vegas in 2026.
